how about a tutorial for safely setting up this phone, for those of us that have no idea what what is, especially since coming from iphone.

That would be helpful. Last year I switch from iPhone to Lineage on one phone and Graphene on another. Wow, the learning curve to Android was steep!
There are lots of setup YouTube videos for those OSes. I didn’t find any for iode. But, you might want to search “Switching iPhone to degoogled” to see what comes up. There are a lot of similarities between other degoogled Android OSes and iode OS. I watched several videos that went through the Settings and discussed security related options.
The main difference with iode is the ideo security app.

FWIW I’ve done an initial app guide for new people going iPhone to iodéOS - its not a step by step tutorial but should at least help people quickly identify suitable apps to safely use (that won’t compromise privacy):
